This week I have two programs that require me to go out of town for three days. The nature of my life, booking out of town business is much easier said than done. Not necessarily the booking part, but the getting out of town part. I love my job. I honestly think I have the best clients in the world. But when business calls for an overnight away the SAHM (stay at home mom) side of me has to kick it into gear before the WAHM (work at home mom) can get out of town…

Making sure there is breakfast…

And dinner… which is where the Slow Cooker comes in. I like to make my favorite chicken minestrone soup to keep their little tummies warm and healthy while I’m away!
Ingredients
1 Free range chicken from the night before (home roasted or supermarket rotisserie)
2 cartons vegetable broth
1 onion
2 cloves garlic
Carrots
Celery
Zucchini
Swiss chard
Kidney Beans
Salt and Pepper to tasted
Topped with Parmesan cheese
Step one: Add whole chicken in 1/2 carton veggie broth, & water until the chicken is submerged. Bring to a boil, then reduce to Medium heat. Season with salt and pepper.
Once most of the chicken is off of the bone (40 -60 minutes) pour the broth and chicken through a colander. Put the broth in a slow cooker with the veggies. Once the chicken has cooled so it can be touched, separate out the meat and add to the slow cooker.
Cook on high for 6 to 8 hours.
When I call to say, “good night!” it’s always nice to hear “Mommy, your soup was really yummy!”
